catching up.

I really didn't mean for it to be this long.... the pile of fabric has mostly been cut, although not yet sewn. See nothing is getting done. We put the kids in soccer for fall. It was supposed to be two games a week for four weeks. Didn't sound so tough. Add to that a practice a week they didn't mention and a class I decided to take at the U for continuing education and there goes four nights a week. Ugh - note to self, don't do that again. Their last soccer game was tonight and actually it is a little sad. They really have improved a lot and they have so much fun and we LOVED our coach, she said we could request her again in spring so we might do this again.

Right after my last post I came across a blog post for a recipe that sounded so good I bought the ingredients on my way home from dropping the kids somewhere and made it that night and it was excellent. And I think Andrew licked his plate (no surprise I know)

Here's the recipe:

Enchiladas Verdes
Ingredients:
3 cups Shredded Cooked Chicken
1 cup Sour Cream, divided
1 Red Bell Pepper, chopped
1 can (4.5oz) Chopped Green Chilies
2 cups Shredded Cheddar Cheese, divided
1 1/2 teaspoon Minced Garlic
1 teaspoon Ground Cumin
1 jar (16oz) Salsa Verde (green salsa)
1/2 cup Water
1 package 6-inch Flour Tortillas
Shredded Lettuce
Additional Sour Cream
Directions:
Preheat oven to 350 degrees F. Grease a 9x13 inch baking dish.
Puree salsa, water and 1/2 cup sour cream in a blender. Spread 1 cup of the mixture over bottom of prepared baking dish.
In a large bowl, mix chicken, 1/2 cup sour cream, red pepper, green chilies, 1 cup cheese, garlic and cumin.
Spoon 1/3 cup of chicken mixture down center of each tortilla. Roll up and place seam side down on sauce in baking dish.
Pour remaining sauce over enchiladas; bake uncovered 35 minutes. Sprinkle with remaining cheese and bake 15 minutes longer until bubbly.
Serve topped with shredded lettuce and sour cream, if desired.
